After our little downpour on Sunday, I thought I would go out and find some dinner. I was planning on going to one of my favorite spots, but on the way passed Bufalo Bob’s Chalupa Wagon and decided to pull in. I was glad I did.
Bufalo Bob was as friendly as he could be. He’s been cooking up chalupas on South First for a few months now. I asked what his most popular item was, and he said The Armadillo. It was amazing, piled high with refried beans, bison, rice, lettuce, tomato and cheese. It blew away my expectations. I also lucked out and got some samples of his homemade hummus, which I highly recommend. I will surely be back again. He uses tons of fresh and locally grown products in his trailer, and don’t let the word buffalo fool you, as they also offer vegetarian options.
He also built a great patio out back with covered picnic tables and plenty of shade.
