Baton Creole brings you a mix of traditional Cajun but with its own Austin food trailer spin on things.
The most interesting menu item is jambalaya on-a-stick! Yes, it can be done; all the semantics of it are a little beyond me, but picture a fried crispy outside and warm tasty jambalaya mix on the inside! They also have a vegetarian jambalaya option. Of course if you’re looking for traditional jambalaya (in a bowl), they have that as well!
Make sure to save room for dessert as the beignet on a stick was absolutely amazing and a must try!
I know you’re probably dying to head over there and give them a try, but they are actually CLOSED on Tuesdays so you’ll have to wait ’til tomorrow! This weekend would be a great time to check them out, as they’ll be donating part of their proceeds to C.A.R.E (Community AIDS Resource and Education).
