I got a hot tip about a food truck that was serving the “best fajitas in Austin.” Intrigued, I set out to order from them for lunch, only to learn that these fajitas are specifically created to be reheated and served at home. Comal Fajita House specializes in vacuum sealed pouches of smoked fajita meat (chicken and beef) that can easily be shipped across the country, or scheduled for pick-up from their East Austin food truck.
The directions for reheating the fajitas are simple enough for even the most inexperienced of at-home chefs. Basically, one boils a pot of water, drops the fajita pouches into said water, waits 20 minutes, removes pouches from water, cuts them open, and dinner is served! The meat itself is tender and more smokey than what you’d be able to fire up on your grill at home.
