In a city better known for its tacos, this trailer off of South 1st street serves as a reminder that bacon, eggs, and cheese can be enjoyed in vessels other than tortillas. You’ll find traditional NY breakfast staples like bagel sandwiches served on locally sourced Rosen’s Bagels, artful avocado toasts, hash, and more on the menu, as well as nods to the South in the form of fluffy biscuits with pimento cheese and other accoutrements.
On this day in particular, I was looking for the best of both worlds, and asked if I could get the traditional breakfast sandwich on a biscuit rather than a bagel. Thankfully the chef obliged, and I was whisked away to breakfast bliss.
Of course, the breakfast taco isn’t in jeopardy of losing its reign at the top of the food chain here in Austin. I personally won’t let it. But it is nice to have some other breakfast options from time to time, and I’ll definitely be back to try the rest of this menu.
